I'm thinking of connecting to VPN via a mobile internet connection from now on. I don't like taking the risk of using my home broadband landline - maybe I'm paranoid.

If some issue happens with a mobile sim provider, you can always cut the service, bin the sim and switch to another provider. Not so simple with a landline.
You are being paranoid use a VPN on the device or home network and it will be fine.
 
Also I have found mobile data not to be as reliable as home broadband, speeds on mobile often suffer from severe fluctuations which will cause buffering.
Hmm, yes I did wonder about that. I do have friends, however, that have remarkably stable mobile connections using a dedicated mobile 4G/5G router with an unlimited data plan. It actually seems higher speed and more stable than most landline broadband connections I've seen, so I'm not sure why on a top notch mobile connection run via VPN there would be much (if any) difference to a landline broadband connection run via VPN.

I had a home broadband which gave me around 20mbps and a unlimited mobile with a full signal (I can see the mast from my window) this gave me about 100mbps, the 20 mbps home broadband was solid it didn’t buffer at all, I thought my mobile connection would be fine to use as it was about 100mbps but found it would buffer frequently. When I run a few speed tests I noticed the speed was very much up and down.

I am not sure if there is a contention ratio on these connections to 4g/5g home broadband routers, like they have on typical home broadband to make sure of a solid connection, but give it a try on your mobile and let us know how it goes.
