Does normal mode turn the WiFi off for the 3.0 Hub? If it does I'll have to leave it as it is, there's quite a few devices connected to it via WiFi in the household and that would cause mayhem.
Normal mode means as router and modem in one. Wifi works as normal. Obviously you may need to reconnect with hub password.

When i checked settings on my Hub 3.0 via Virgin it showed this (Attached) - So i'm unsure if i actually would have WiFi if i changed my settings?
Any Idea's?

Few posts on here recommending Reolink and I would agree. Great video doorbell (available as WiFi and PoE), easy to install and setup, along with a separate HDD (and cameras too).
No subscriptions, an easy to use mobile App - setup custom alerts for any motion, person, vehicle and Doorbell press
 
Was going to recommend reolink as well. I use Reolink paired with Frigate on a server to store everything locally. Cams all the way around the house that can detect people and turn on lights in middle of night, warn me, etc. Lots of configuration though to do that. For the very basic, reolink + their app is fine.
