Is it it possible to record one iptv channel whilst watching another when set up on zgemma for example record a movie channel while watching sports channel?

Yes, But you may need a iptv multi room

Depends on what your provider has given you. If you have an m3u playlist then yes, I do it on mine.

So would i need a mutiroom for say downstair box, so i could record & watch, then another sub for box upstairs?

Yes but it's take's long set up a epg using a m3u file

Sure, you use 2booms plugin to create your bouquet from your m3u. Then you use Echannelizer to assign epg to each channel. It takes a while but it's worth it.
